Cake balls dipped in chocolate and white chocolate.
The basis of these goombas comes from the cake ball technique from the wondrous Bakerella! These little guys aren’t hard to do, but the cake balls will take some time to set.
Box of cake mix
Items to go into cake mix (usually eggs, oil, and water)
Canned vanilla frosting
3/4 cup chocolate candy melts
1/2 cup white chocolate candy melts
Chocolate covered raisins
Fondant or royal icing
Black food coloring
First thing to do is bake the cake. Once it’s baked and cooled, break it up into tiny bits. You can use your hands for this bit. Much more fun than a spoon.
Add 3/4ths of the container of frosting. You can use your hands for this part too, but it’s a bit more messy!
Shape into two inch balls.
Place on a cookie sheet and give the cake balls rounded, pointy tops.
Pop them in the freezer for an hour or so for them to firm up.
To create the bottom part of the goomba, take a small, circular cookie cutter and insert into the bottom of the cake ball. You’ll want more than an 1/2″ of an inch for the base.
Once you’ve inserted an 1/2″ or so, use a knife and cut around the edge of the cake ball.
Peel off the edge of the cake ball.
After all the goomba shapes have been created, pop back in the freezer while you’re melting the chocolate. You’ll want the cake balls pretty firm so they don’t break apart in the melted chocolate.
Melt the chocolate candy melts in the microwave by zapping them for 30 seconds at a time, stirring after each interval. Once fully melted, take a goomba and, holding it by the base, dip the top end in the chocolate. Repeat for all goombas.
Melt the white candy melts the same way, microwaving for 30 seconds at a time. Take a chocolate covered goomba and dip the bottom half in the white chocolate.
For the eyes, you can use thick white royal icing or fondant. I went with fondant for the eyes and tried out black fondant, black royal icing, and mini M&Ms for the pupils. The black royal icing was the best out the three for me. The M&Ms were a little big and the black fondant was harder to get to stick than the royal icing.
Use black and white fondant or black and white royal icing (what I used) for the mouth and teeth.
To add the goomba booties, add a dap of frosting or royal icing to a small chocolate covered raisin and press onto the goomba.
A half of a box of cake mix will give you a dozen cake goombas.
