These cookies come from an Italian Wedding Cookie recipe. Unlike iron, these cookies are soft and buttery goodness.
1 1/2 cups unsalted butter
1 cup powdered sugar
1/2 teaspoon salt
1 1/2 cups pecan chips (or ground almonds)
4 1/2 teaspoons vanilla extract
3 cups sifted all-purpose flour
Can of cashews
Brown food coloring
~1 teaspoon water
For the royal icing:
1 cup powdered sugar
2 teaspoons meringue powder
1 tablespoon water
Black food coloring
Sealable plastic bag
Note! I was more than doubling the above recipe, so if there looks like there’s a ton of butter and sugar in the pictures, there is!
Preheat oven to 325°F!
First step, cream butter in a bowl.
Slowly add powdered sugar and salt. Mix until light and fluffy.
Add the pecans (or almonds) and vanilla.
Blend in flour and mix well. The dough will be quite thick!
Shape into balls, using one tablespoon of dough per cookie.
Place on cookie sheets and bake for about 15 min.
Allow the cookies to cool.
While your cookies are cooling, pair up your cashews. You want the most horn-like nuts.
Now to make the royal icing!
Mix together the cup of powdered sugar, meringue powder, and water. You want the mixture quite thick so it won’t run on the cookie.
Add the black food coloring to the royal icing until you get a nice steel color.
Once the color is fully incorporated, scoop the icing into the plastic bag. Seal the bag, and snip off one of the corners.
Now to ice the cookies!
First, ice the the top and most of the back of the cookie. You don’t want to ice the back completely – you won’t be able to pick up the cookie otherwise. (Well, okay, you could. But it’ll be quite messy!)
If at any point the thick royal icing need to be nudged into place, use a toothpick to poke into place.
Draw two “V”s for the eye piece.
Add the steel sideburns.
Add the two cashew horns.
Add royal icing around the top edge of the horns.
Draw a headband across the forehead of the helmet.
Starting in the back, draw a line down the middle of the helmet, ending at the nose.
Repeat for all your cookies!
To complete the horns, take a teaspoon of water and a teeny tiny drop of brown coloring. Paint lines on the cashews.
