Sugar cookies withroyal icing featuring Ms. Pacman and ghostly friends.
The white Pacman ghosts are perfect for Halloween! Since you’ll already have red royal icing on hand for those ghosts, you can use that to make red and pink ghosts as well.
I’ve put together a video of the steps in action below.

Ingredients:
Sugar cookie dough
Blue, red, and yellow food coloring
Tiny heart sprinkles
Mini chocolate chips
Edible fine tip black marker
1 tablespoon meringue powder
2 cups powdered sugar
2 teaspoons lemon juice
The cookie cutters you’ll need are: a tiny tulip, a circle, and a large star. If you don’t have a star cookie cutter, another cookie cutter with pointy bits will work out peachy.
Preheat oven to 350°F!
Roll out the dough so it’s about 1/4″ thick. Cut out the ghost and pacman shapes from sugar cookie dough.



Place on a cookie sheet.

Bake for about eight minutes, or until the tops are golden brown. Allow to cool.
For the royal icing, mix together the egg white and lemon juice, then mix in the powdered sugar.
Take a couple of spoonfuls of royal icing and add to a bowl. Add a few drop of food coloring and mix. Once the color is fully incorporated, pour the icing into a plastic bag. Seal the bag, and snip off one of the corners.
Pipe the outline of a ghost and fill in.
When creating the red royal icing, you’ll want to save some for later, along with some white royal icing, too. I’ve found if you leave a couple of tablespoons worth of icing in the bag, it will not harden and can be used at a later time.

Do the same for the Ms. Pacman cookies.

Before the royal icing dries, quickly add the red heart sprinkles to the top of the Ms. Pacman cookie.


Once you have all the cookies iced, allow them to sit for a few hours. Overnight is even better!

Using the white and red royal icing you saved, pipe on the frowny mouths, eyes, and lips for the ghosts and Ms. Pacmans.



For the googly eyes for the red and pink ghosts, add two squeezes of white royal icing.
Quickly add the mini chocolate chips.
To complete Ms. Pacman, draw on the beauty mark and the eyes with the fine tip edible pen.
Completed cookies!

Makes about four dozen cookies.
