Big-headed sugar cookies with royal icing.
The Ninjabread Men Cookie Cutters by Fred & Friends are awfully cute and, with a little head enlargement, can transformed into Mega Man cookies.
Ingredients:
Sugar cookie dough
~1/8 cup flour for dusting
Sky Blue food coloring
Royal Blue food coloring
Peach food coloring
Black food marker
For the royal icing (this will be split into two batches):
4 cups powdered sugar
3 tablespoons meringue powder
~1/4 cup water
Equipment:
Ninjabread Men Cookie Cutter
Circle cookie cutter
Small circle cookie cutter (optional)
Sealable plastic bags
Toothpicks
The ninjabread men cookie cutter we want is the standing and punching cookie cutter. The circle cookie cutter should be the size of the body of the ninjabread man.
Dust down some flour and roll out the dough so it’s about 1/4″ thick.
Cut out a ninjabread cookie man and a circle.
Using the circular cookie cutter, slice off the head of the ninja.
Take the cookie dough circle and press onto the neck the ninjabread cookie man.
The head will look awfully big and that’s okay! Mega Man has a big ol noggin.
Repeat until you’re low on cookie dough.
If you want to have the beam balls that fire out of Mega Man’s gun arm, cut out tiny circles using the small cookie cutter.
Place the cookies on a cookie sheet and bake for 6-8 minutes, or until the edges are golden brown. Allow the cookies to cool.
For the royal icing, mix 2 cups of powdered sugar, 1 1/2 tablespoons meringue powder, and a couple of tablespoons of water.
Blend until mixture is smooth. If the mixture is too thick, add another tablespoon of water until you have the right consistency. You want the mixture thick enough so a drop of icing will stay on the surface for a few moments before blending back in.
Save a few tablespoons of the white icing. With the rest of the icing, add a few drops of royal blue food food coloring and mix.
Scoop the icing into a sealable plastic bag and cut a corner off the bag. Do the same with the white royal icing.
Take a cooled cookie and draw on the helmet, hands, the blue underpants, and blue booties. The arm on the right should have a pointy bit for the gun.
Use the white royal icing to dot on the eyes.
If you made the smaller circle cookies, fill those cookies with white royal icing.
Repeat for all cookies. Allow to dry for several hours.
When the cookies have dried, take two cups of powdered sugar, 1 1/2 meringue powder, and add a couple of tablespoons of water. Mix!
Take 1/8 of the royal icing and add a drop of peach food coloring. You don’t need a lot.
Color in the faces of the Mega Mans. Use a toothpick to nudge into the place.
For the rest of the royal icing, add sky blue food coloring and mix. Fill in the body, arms, and legs. Add the dot and stripe on top of the helmet. The toothpick is once again super helpful for nudging the royal icing into place.
Use the food marker to draw on the eyes and mouth.
Some of mine came out a little derpy, but that’s okay. It adds charm!
