Buttery lemon cookies for those who rain down riffs via colorful plastic guitars.
These cookies are designed after the colored notes from the scrolling fretboard.
Ingredients for Cookies:
1 1/2 cups all purpose flour
1/4 cup powdered sugar
1/2 cup butter
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons milk
1 teaspoon vanilla extract
2 teaspoons lemon extract
Whisk together the flour, sugar, baking powder, and salt. Then soften the butter, add to dry the mixture, and blend.
Add in the vanilla and lemon extracts along with the milk. It’ll be a pretty thick dough.
Wrap up the dough and chill for a couple of hours to make it easier to roll out.
After the dough is chilled, preheat oven to 350°F. Dust some flour down and roll out the dough to about 1/4″ thickness. Cut with a round, medium-sized cookie cutter.
Bake for about eight minutes or until the cookies are golden brown. While the cookies are baking and cooling, you can whip together the royal icing.
Ingredients for Royal Icing and Topping:
1 egg white
2 cups powdered sugar
2 teaspoons lemon juice
1 teaspoon light corn syrup
Orange, blue, yellow, red, and green food coloring
Mini Oreo Cookies
Blend together egg white, powdered sugar, lemon juice, and light corn syrup for about two minutes.
Take 1/4 cup of the royal icing and pour into a small bowl. Add a squirt of coloring and thoroughly mix.
To frost the cookies, flip a plastic bag inside out.
Spoon the frosting into the bag.
Zip up the bag and violà! Frosting bag!
Snip a corner off the end of the plastic bag and gently squeeze to frost the cookies.
Once the royal icing has hardened (it takes about 30 minutes), twist off the top of an Oreo cookie so the frosting is completely on one half of the cookie. Add a dab of frosting to the middle of the frosted cookie and add the frosted Oreo.
Makes about a dozen and a half medium-sized cookies.
