Pokemon Pikachu Sugar Cookies

Pikachu's such a popular little guy that he no doubt has his very own cookie cutter. With a little trimming, a bunny cookie cutter will work just as well, plus they're especially easy to find this time of year. They're usually right next to the Cadbury Eggs. (Not a huge fan of those chocolates, but I love the Cadbury bunny. Buckbuckbuckbuckbuck.)

Ingredients:

Sugar cookie dough
Chocolate M&Ms
Red mini M&Ms
Yellow food coloring
Black food coloring

Ingredients for Royal Icing (for a dozen cookies):

2 cups powdered sugar
1 and 1/2 tablespoons meringue powder
Several tablespoons warm water (2-4)

Dust down some flour and roll out your cookie dough so it's about 1/4" thick. Cut out the bunny shape with the lightly floured cookie cutter.

Because this cookie cutter has poochey cheekies, I used a circular cookie cutter on the edges to round the face out. Pikachu has pointier ears than a bunny, so a knife was used to slim them down.

Pop the cookies into the oven at 350°F for 8-10 minutes or until the edges are golden brown.

Allow the cookies to cool.

For the royal icing, mix together the powdered sugar, meringue powder, and two tablespoons of warm water until the mixture is thick and glossy. If it's too thick and not easily stirred, add another tablespoon of water to the mix.

Scoop 3/4th of a cup of royal icing into a separate bowl. Add the yellow food coloring and mix. Spoon the yellow royal icing into a ziplock bag, seal, and snip the corner off.

Using the plastic bag, color in Pikachu except for the tips of the ears. We'll get those with black icing later.

Before you move on to frosting the next cookie, add the two chocolate M&Ms for eyes and mini red M&Ms for the cheekies.

Once all your cookies have been iced, you'll have to decide if you'd like to have whites on the eyes or not. If so, leave three to four tablespoons of icing in the bowl for the eyes. Otherwise, you can dye the rest of the icing black.

If the black icing is a little runny, add a little more powdered sugar. Pour the black icing in a plastic bag, seal, snip, and color in the ears.

Carefully draw a triangle for the nose and a zigzag or whatever mouth design you'd like. If you'd like to add whites to the eyes, add the last of the royal icing to a sealable bag and dab on the chocolate M&Ms.

Allow the royal icing to dry for a couple of hours. I made a few with shiny eyes and a few without for variety!
