Kirby Cupcakes

Kirby CupcakesLow fat strawberry cupcakes.

This recipe comes from a coworker from a potluck that was dubbed "the Heart Healthy Potluck." (The potluck was around Valentine's Day and we're all trying to get nice and fit.) They're low fat and tasty to boot!

Ingredients:

Package of strawberry cake mix
1 1/2 cup of Diet Sprite (almost a full can)
Red M&Ms (for booties)
Black decorators gel
Red decorators gel

Mix together the cake mix and Diet Sprite. Ignore the back of the cake mix box and don't add the eggs, oil, etc., all you need is Diet Sprite! The mixture will be fluffy when it's all blended together.

Diet Sprite is my favorite soda. Although I get funny looks around these parts for saying "soda." Most people around here call that sort of drink "pop."

Fill up the cupcake containers halfway.

Bake for about 15 minutes or until a toothpick inserted into the middle of the cupcake comes out clean. Allow to cool.

Using the decorators gels, draw on the black oval eyes and the red mouth. These gels are tasteless so you don't need to worry about flavors clashing with the strawberry cupcake.

Use a dab of decorator gel – either color – at the bottom of the cupcake. Add the red M&Ms for booties.

One box of cake mix will make two dozen cupcakes. Only about 100 calories per cupcake, too!


I totally loved this idea and was really intrigued by using Diet Sprite (or in my case, Sprite Zero) instead of eggs, oil, etc.

I'm in the process of making similar cupcakes right now (My supermarket didn't have strawberry, so I did white cake with pink food coloring) and I'm pretty excited to see how they come out.

The batter tastes great though. :P

Delicious recipe :) mine didn't come out as pink as yours...at least not on the top. But they came out incredibly tasty, and cute!

Hi there, I want to make these cupcakes, but I'm wondering if I can use regular sprite instead of diet...or ginger ale or something like that. Would that be an okay substitution, or ruin the cupcakes? Please let me know. Thanks! :)

I made a variation of these for my office when I was leaving, and I will admit, I didn't use the cake recipe suggested (as I am not American, and therefore it isn't really normal to use packet cake mix) and just used a victoria sponge recipe with red food colouring in. I think they could have done with a little extra flour in them, but they were okay other than that. Then I used your suggestion from the Kirby cookies and gave them freckles. However, I couldn't find any sparkly pink sweets so I dyed some caster sugar, which worked surprisingly well! I used liquorish for the eyes (as I had some left over from making goomba cupcakes and used 3 pink M&Ms for the mouth and boots, placing the boots further apart to make it look slightly better. An awesome decorating idea, and my work mates and I thank you for it whole heartedly :D

these look so tasty...although the idea of putting soft drink (thats what we call soda/pop in australia) seems a bit strange...but i guess u have to try it before u can comment

I couldn't find packet cake mix so i guess I'll just make that from scratch, but how much mix is there in a packet?
