Kirby Cupcakes
Low fat strawberry cupcakes.
This recipe comes from a coworker from a potluck that was dubbed "the Heart Healthy Potluck." (The potluck was around Valentine's Day and we're all trying to get nice and fit.) They're low fat and tasty to boot!
Ingredients:
Package of strawberry cake mix
1 1/2 cup of Diet Sprite (almost a full can)
Red M&Ms (for booties)
Black decorators gel
Red decorators gel
Mix together the cake mix and Diet Sprite. Ignore the back of the cake mix box and don't add the eggs, oil, etc., all you need is Diet Sprite! The mixture will be fluffy when it's all blended together.
Diet Sprite is my favorite soda. Although I get funny looks around these parts for saying "soda." Most people around here call that sort of drink "pop."
Fill up the cupcake containers halfway.
Bake for about 15 minutes or until a toothpick inserted into the middle of the cupcake comes out clean. Allow to cool.
Using the decorators gels, draw on the black oval eyes and the red mouth. These gels are tasteless so you don't need to worry about flavors clashing with the strawberry cupcake.
Use a dab of decorator gel – either color – at the bottom of the cupcake. Add the red M&Ms for booties.
One box of cake mix will make two dozen cupcakes. Only about 100 calories per cupcake, too!
