After making Pacman Cookies last week, I ended up with a bit of sugar cookie dough left over; perfect for testing out how well my new black food paste worked. With all the powdered sugar in royal icing, I was curious to see if I could get a true black or merely a gray. Also, would black gel be a superior option to black royal icing? These were mysteries soon to be answered.

The game character to answer these food coloring questions is Phanto from Super Mario Brothers 2. The mask's eyes and mouth will be a good test for the black royal icing. Phantos are flying red and white masks that hide in vases and chase anyone who picks up a giant key. Super Mario Brothers 2, while fun, is a strange and confusing game.

Sugar cookie dough
1 egg white
2 cups powdered sugar
2 teaspoons lemon juice
1 teaspoon light corn syrup
Red food paste color
Black food paste color

The royal icing will make enough for about a dozen 3" diameter Phanto cookies.

Preheat oven to 350°F!

Use a circular cookie cutter to out the shapes. The dough should be at 1/4" thickness.

Bake for about eight minutes, or until golden brown.

Allow the cookies to cool.

For the royal icing, mix together the egg white, lemon juice, corn syrup, and powdered sugar for the royal icing. Scoop up one-fourth cup of the royal icing and set aside. You'll be using this for the black royal icing later.

Pour half the white royal icing into a ziplock bag and seal.

Snip a tiny bit off of one corner.

Gently squeezing the bag, draw the outline on one half of the cookie and fill in. Repeat for all cookies.

With the leftover royal icing, add the red food paste (I used one good squirt), mix, and then pour into another ziplock bag. Fill in the other half of the sugar cookies with red.

Allow the cookies to sit for an hour or so for the royal icing to harden.

Black food gel was tried for the face decorations first. They came out okay.

Now for the royal icing version. Take the one-fourth cup of royal icing that was set aside earlier and give it a tiny squirt of black frosting. If the color's too gray, you can always add a bit more. You'll want the icing on the thicker side, since you don't want it to run too much. If the icing is too thin, add a bit of powdered sugar and mix in.

Pour the black icing into a ziplock bag, snip off a corner, and draw the eyes and mouth.

To get the proper look of the Phanto's eyes and the mouth, use a toothpick to guide the icing to its proper place.

The royal icing will firm up on the cookies in another hour.

Between the royal icing and the black gel, I'm going to have to go with the royal icing. Nothing like that clean royal icing look!
